Pig Heads, pig heads….roly poly pig heads! Just looking at this epic dog may kill whatever appetite you may have had, but don’t judge a dog by its toppings. As a culinary student I have made a few stranger dishes, but nothing can compare to this pig head, tri-tip, mushroom, cheese, bacon, and barbeque sauce covered hotdog. THIS is the product of culinary student leftovers. It’s hard to explain the long process it took to get this dog to look SO appetizing, but trust me you probably don’t want to know, so this is your one warning to stop reading now if you are squeamish, at all!
It all starts with a couple of pig heads. Yes that’s right, PIG HEADS. Sautéed like little button mushrooms until their cheeks fell off, literally! The meat of the pig head is surprisingly tender, very flavorful and extremely lean. Then add some tri-tip and grind them together until it looks like head meat mush, add some seasonings and BBQ sauce and call it a day. The second half of this dog is rendered and then braised slab bacon with gruyere cheese, and portabello mushrooms sautéed, again to look like mush.
This Sloppy-Joe style dog could not be any more flavorful, and fun to watch others reaction to you taking a giant bite. Of course you can feel your arteries clogging up with every bite, but nothing a week long de-tox can’t fix. I promise that after you eat something like this you will never forget it!
